Sherba is unsmoked, air-dried yerba mate from agroecological farms in Paraguay, then aged 24 months. The taste is smooth and earthy, which is how most people prefer to start.

Use hot water around 70–80°C, not boiling. Boiling water is the usual reason a first cup tastes harsh. Fill the cup two-thirds, tilt it, add water slowly, and refill as you go. Most people find their taste by the third or fourth cup.

FOUR SIMPLE STEPS
Preparing mate is simple. Follow these four steps, then adjust the strength and temperature to your taste.
Step 1
Fill the gourd about two thirds full with Sherba. Leave enough room for the leaves to expand and for easy refills.
Step 2
Cover the top, shake gently, then tilt the gourd to create a slope and an open space on one side.
Step 3
Add a small splash of cool water to the lower side. Wait briefly, then insert the bombilla and keep it still.
Step 4
Pour water at 70 to 80°C into the same lower side. Sip through the bombilla and refill while the flavor lasts.
